Spanish potato omelette or tortilla

If you are going to make tapas, or if you just want a good lunch dish, this is a good alternative.

I start by slicing 2 onions and 2-3 raw potatoes. I fry it on low heat in olive oil, until the potatoes are cooked through. I turn the mixture occasionally so it does not burn.

I whisk together a mixture of 4 eggs, 4 tablespoons cream (you can use milk or water), 2 finely chopped garlic cloves, salt and pepper and pour it over the potato mixture.

I put the lid on and leave it for a few minutes to set a little, before sprinkling over the fox cheese and small, half tomatoes.

I put the lid back on and leave it on low heat until the tortilla has hardened and the cheese has melted. Served with good bread, for example country bread or olive bread.
