Raita is a natural part of the meal if you are serving food from India, Pakistan, Nepal or Bangladesh. It is easy to make and can easily be made the day before, if you are going to have guests.

3 dl natural yoghurt

1 grated cucumber

1/2 ts salt

1/2 tsp cayenne pepper

1 teaspoon ground cumin

1/2 teaspoon ground black pepper

2 tablespoons mint sauce, ev. a little finely chopped mint.

Stir all the ingredients together and leave to cool until used. Garnish with a little coriander.
