Omelette with spring onion sausage

Omelette is good for breakfast, but is also good for lunch, supper, or as part of a tapas meal.

4 egg

4 tablespoons cream

2 spring onions in strips

2 ramson sausages in cubes

1 red pepper in cubes

½ ts pepper

1 ts salt

Grated cheese (as much as you like)

Whisk together eggs, cream, salt and pepper. Fry the spring onion sausage in a little butter. Pour the egg mixture over. Carefully lift what has hardened so that all the liquid comes into contact with the forehead. Add the rest of the ingredients, mix together and sprinkle cheese on top. Cover with a lid until the cheese has melted. Serve with good bread.
