Couscous for glutenallergikere

Many North African dishes are to be served with couscous. I found that I would try using quinoa instead and this was very successful.

For 4 people, use 2 dl quinoa and 4 dl water.

Rinse the quinoa and place it in a dry, hot pot until it changes color. It's going pretty fast. Add a little oil and finely chopped onion. Pour on water, a handful of raisins and cook as explained on the quinoa packet. Add a small bag of pine nuts and finely chopped herbs, e.g. mint and coriander. Served with e.g. tagine or barbecue.
