Mussels the Italian way

Italian-style mussels are one of my favorite dishes with mussels. The recipe is suitable for 4 people, if it is served alone as a main course and 8 people, if it is served with pasta.

2 kg blåskjell

4 finhakkede løk

1 ss tørket oregano

1 ss tørket timian

4 finhakkede fedd hvitløk

1 fl. hakkede tomater (Mutti)

4 ss fiskefond

1 glass hakkede, soltørkede tomater

1 lite glass oliven

Grated peccorino (or parmesan)

Start with the sauce. Fry the onion and garlic in a little of the oil from the sun-dried tomatoes. Add oregano, thyme, fondant, chopped tomatoes and drained, sun-dried tomatoes. Let it cook for about 1 hour. Add the olives and mussels, stir and let it soak under the lid until the mussels have opened. Serve with a sprinkle of peccorinp, pasta or good Italian bread, e.g. foccacia, which you can find the recipe for HERE .
