Chimichurri is used as a sauce and dip for many kinds of dishes in Central and South America. It is suitable for both fish and meat dishes.

3 tablespoons red wine vinegar

2 dl good olive oil

2 cloves garlic

2 shallots

1 fresh red chili

2 pk fresh leaf parsley

1 pot fresh coriander

1 tablespoon dried oregano

Salt and pepper

Everything is finely chopped and seasoned with salt and pepper. Cover and let the chimichurri rest at room temperature until ready to use.
