Coconut chicken is a dish that's easy to multiply the recipe and make in a large pot, if there are many people to eat. This recipe is suitable for 4 people.
2 onions, coarsely chopped
800 g chicken fillet in strips
4 large sliced carrots
1 box of coconut milk
1 box of coconut cream
1/2 bottle of sweet chili sauce
1 tablespoon chicken stock
4 spring onions in strips
1 can pineapple chunks
1 yellow pepper in strips
Salt and pepper
1 bok choy in strips
Saute the onion along with the chicken in a little oil in a saucepan. Add carrot, coconut milk, coconut cream, fund and sweet chilisauce and let it cook until chicken is cooked through and the carrots still have chewing resistance.
Add the rest of the ingredients, season with salt and pepper and serve the coconut chicken with rice or noodles.
