Parmesan salmon with cucumber salad and cold sour cream sauce

Parmesan salmon is tasty and slightly crispy on top. It tastes great with the sour cream sauce and cucumber salad. You can use other kinds of fish for this dish as well, e.g. trout and char. The recipe is suitable for 4 people.

Salmon:

800 g salmon fillet, preferably Salma

1 handful of finely chopped parsley

200 g grated parmesan

Salt and pepper

Divide the salmon into suitable portion pieces in a baking dish, greased with butter or oil. Season with salt and pepper, but remember that the Parmesan is also slightly salty. Add finely chopped parsley and sprinkle with Parmesan. Put in the oven at 200 degrees until the crust on the Parmesan salmon is golden and crispy.

The sour cream sauce:

1 box of sour cream

The juice of 1/2 lime

1 finely chopped garlic clove

1 good handful of finely chopped chives

Salt and pepper

Mix everything and season with salt and pepper.

Serve the Parmesan salmon with optional potatoes. You can find recipes for cucumber salad, both with and without sugar, here.
