Mustard sauce for fish tastes good for most fish species, both white and red. It's great to use for fish balls and fish pudding too and a bit more exciting than the traditional sauce.
3 large, finely chopped shallots
1 finely chopped garlic
1 teaspoon honey
3 dl cream
1 tbsp dijon mustard
1 tablespoon fish stock
Salt and pepper
2 tablespoons finely chopped dill
Saute shallots and garlic in butter until soft and shiny. Add honey, mustard, funds and cream. Let it boil 10 minutes, before everything is run together into a smooth sauce, with a hand blender. Season with salt and pepper and add dill just before serving.
