Chocolate mousse

Chocolate mousse is a lovely dessert and great to serve in company, since you can make it ready the day before. You can make it with rum or brandy, if you want a more adult flavor.

160 g dark chocolate, 65%
6 egg yolks
145 g sugar (120+25 grams)
6 egg whites
2 tablespoons of rum or brandy

Divide the chocolate into pieces and melt it in a bowl over a water bath.

Beat room-temperature egg whites stiff with 25 grams of sugar until a chewy meringue. Beat room temperature egg yolks and 120 grams of sugar white and fluffy in another bowl.

Fold 1/3 of the egg yolk mass into the chocolate. Add the rest of the egg yolk mass and fold it together with a spatula.

Fold the stiffly beaten egg whites into the mousse and taste if necessary. with rum or cognac.

Spread the mousse in dessert bowls or glasses (approx. 2 – 2.5 dl) and set it cold for at least three hours or overnight.
