In Thailand, they have adapted foreign dishes by toning down strong spices and adding more fresh herbs such as lemongrass and galangal root. They use less of the strong spices, and more fresh herbs. Thai food can be strong, and yet it is never of long lasting. Instead of serving one dish at a time, all the dishes are served at the same time.

The food is a perfect mix of strong, mild, sweet and sour.
