Tuna with couscous and salad

Tuna with couscous and salad is served with a curry and mango dressing and is inspired by the countries of the Middle East. If you get hold of tuna, it can just as well be made with other types of fish, which are suitable for frying or grilling.

Couscous:

2 small red onions or 4 shallots, finely chopped

4 servings of couscous

2 tablespoons shallot stock, if necessary stock cube or other stock

4 tbsp olive oil

1 bag of pine nuts

1 bag of pistachios

Fry the onion in a little oil, add the stock, couscous and water and cook according to the instructions on the package. Mix in the rest of the ingredients and serve.

Salat:

Salad of your choice, finely shredded

Spicy red cabbage, or ordinary red cabbage, finely shredded

1 spring onion, finely shredded

1 diced orange

1/2 paprika in strips

1 snow granateplekjerner

1 handful of sprouts, e.g. sugar pea sprouts

Put everything in a bowl or on a plate, so it's easier to see all the ingredients.

Dressing:

1/2 cup sour cream

1 dl mayonnaise

1 tbsp curry

2 ss mangoed thick

Salt and pepper

Mix everything, season with salt and pepper and set cold until used.

 

Tuna:

4 tuna steaks and 200 - 250 g

Olive oil to brush with

Salt and freshly ground pepper

1 tbsp olive oil

Brush the tuna with a little oil and sprinkle with salt and pepper. Fry the tuna steaks on high heat for 2 minutes on each side, either on the grill or in a frying pan. It should be pink in the middle.
