Potato Day

The fact that potatoes have been given their own day in the United States seems nothing but fair, since it has been cultivated for about 10,000 years. In Norway potato has history dating back to around the year 1600 and older generations could not think of a single midday meal without it. My grandfather even ate potatoes along with spaghetti and meat sauce.
