This is a tasty and easy lunch dish. You can bake ciabatta, but you can also buy half-fried, which tastes perfectly ok.
Heat the ciabattas in the oven and then divide them in half. Spread on pesto (you can make it yourself, but if you buy, I recommend that you check on the glass that there are pine nuts in it). Add sliced mozzarella cheese. Season and fry the chicken fillet and place them on the ciabatta base. Add half the tomatoes and basil leaves. Drizzle over good balsamic vinegar and put on the ciabatta lid.
