Beef salad with croutons

Beef salad with croutons is fantastically good and one of my favorite salads. It's great to make when you have leftovers after a tenderloin dinner. For the croutons, I have used homemade puff pastry, but you can of course also use ready-made puff pastry.

Croutons:

4 writes loff in cubes, preferably days old
4 tbsp olive oil
1 clove of garlic, minced or pressed through a garlic press

Stir together the oil and garlic. Place the loaf in a frying pan and drizzle over the oil mixture. Brown on all sides at medium heat, or on a baking tray above at 200 degrees.

Dressing:

4 tbsp olive oil

2 ss mangoed thick

1 finely chopped chili

Salt and pepper

Whisk together all the ingredients for the dressing and pour over the salad just before serving.

 

Salads:

20 mini tomatoes divided into 2 or 4

1/2 cucumber into small cubes

1/2 glass sliced black olives

1 green pepper

10 cm leek in fine strips

400 g cold tenderloin in strips

Grated parmesan

1 pot of basil leaves

Layer all the ingredients in a bowl or on a plate and pour over the dressing just before serving.
