Cauliflower soup with chicken and crispy bacon

Cauliflower soup can be bought in bags, but it is just as easy to make yourself. It also tastes much better. This recipe with chicken is good and filling and is suitable for 4 people.

2 chicken fillets in strips

1 cauliflower

1⁄2 finely chopped onion

8 DL of milk

2 chicken broth cubes

2 dl cream

1⁄2 ts salt

 

1⁄4 ts pepper

 

Slightly fresh, finely chopped parsley

 

Fry the chicken strips in a little butter in a frying pan and let it simmer until it is cooked through.

Clean the cauliflower and divide it into bouquets. Put cauliflower bouquets, onions, water and broth in a saucepan. Bring to the boil and let it cook until the vegetables are tender.

Take some bouquets of cauliflower from the soup and run the rest of the soup evenly with a hand mixer. Add cream and season with salt and pepper. Add chicken, cauliflower and parsley.

Served with good bread and maybe some crispy bacon on top.
