Whale steak with mashed potatoes and red wine sauce

Whale steak with mashed potatoes and red wine sauce is perhaps my favorite dish with whales and with grilled vegetables it tastes extra good.

Mashed potatoes:

500 g almond potatoes

150 g butter

6 tablespoons cream

Salt and pepper

Peel the almonds and cook them tender in unsalted water. Pour off the boiling water and let the potatoes evaporate without a lid, so that they become dry on the surface.

Mash the potatoes and stir in melted butter and cream. Whisk until you get a smooth and fluffy puree. Season with salt and pepper.

Sauce:

1/2 finely chopped onion

a little butter for frying

2 cloves finely chopped garlic

4 dl red wine

2 tablespoons good and sweet balsamic vinegar

2 bay leaves

1 sprig of rosemary

4 dl good stock, e.g. vegetable or chicken

100 g butter

1 ss maisenna

Salt and pepper

Glossy the onion in a little butter. Add garlic, balsamic vinegar and red wine and let it boil to 1/4 of the amount of liquid, it takes about 30 min. Add stock, laurel and rosemary and let boil for another 20 minutes. Strain the mixture and add the cornstarch. Bring it to a quick boil and add the butter. Once the butter has been added, the sauce should not boil anymore, only stirred until the butter has melted.

The whale:

200 – 250 g whale steak per person

Salt and pepper

Season the steaks with salt and pepper and fry or grill them for 3 minutes. on each side.
