Caramel dream with popcorn

Caramel dream with popcorn is a lovely dessert, which my husband has invented. If you don't want to make your own caramel sauce, you can use Hershey's Sundae Syrup, which you get from Meny, but then you have to stir in a pinch of salt. Caramelized popcorn is sold at Kitchn and some interior design stores.

Salted Caramel Sauce:

1/2 dl water

2.5 dl sugar

6 tablespoons butter, at room temperature

1.25 dl whipped cream, at room temperature

1 teaspoon Maldon salt

Divide the butter into pieces and set it aside.

Stir together sugar and water in a saucepan, and heat on medium heat, so the sugar dissolves. Boil until the water evaporates, then the sugar caramelizes. Add the butter and whisk until it has melted. Take the pan off the plate and pour in the whipped cream in a thin jet while whisking constantly until everything is mixed. Whisk in the Maldon salt and cool the caramel for 10 minutes.
Pour into airtight container and place in refrigerator until ready to use.

The Caramel Dream:

125 g ricotta

150 g sugar

2 egg

150 g salted caramel sauce + a little to pour over at the end

Caramelized popcorn

Edible flowers, berries or fresh mint

 

Beat egg dose of yolks with half the sugar, before mixing in ricotta and salted caramel, until you have a smooth mass.

Separate the yolks and whites from each other. Beat the white with half the sugar, until you have a stiff meringue. Cut the meringue into the egg mixture.

Pour the mixture into serving glasses and chill until you want to decorate and serve it.

Serving:

Add popcorn and pour over some caramel sauce. Garnish with edible flowers, berries or fresh mint. We have used berries from the garden, which guests can pick off the stems themselves.
