Piña Colada is my favorite drink when I'm in the south. It tastes delicious of pineapple and coconut and can happily replace a dessert. Its origin was the bartender at the Hotel Caribe Hilton in Puerto Rico, Ricardo Garcia, who served it as early as 1954.
4 cl Bacardi white rum
2 cl pineapple juice
2 cl coconut milk
1/2 lime, juice only
Crushed ice
Pineapple for garnish
Pour crushed ice, pineapple juice, rum, coconut milk and lime into a blender and process for about 20 seconds.
Pour Piña Colada into a cooled glass and garnish with a slice of pineapple. I have added frozen pineapple cubes, to keep the drink good and cold in the summer heat.
