I like to make new varieties as a welcome drink, when I have guests. Since I made rhubarb juice this summer, it's extra fun to use it for a little different.
Pour about 2 tablespoons of rhubarb juice into the bottom of the glass. Top up with prosecco (or cava or other sparkling wine) and serve immediately. You can also use champagne soda, as an alcohol-free alternative.
