Swedish rum sauce or roe sauce tastes good with both smoked, baked, fried, grilled and boiled fish. It is great as a side dish for both starters and main courses and is served cold.
400 g creme fraiche
75 g mayonnaise
2 shallots, finely chopped
10 cm leek, finely chopped
75 g red roe, e.g. salmon roe
1 ts salt
1 tsp lemon pepper
Stir everything together and let it sit cold for a couple of hours, before seasoning with salt and possibly more pepper. The roe is very salty, so it's important to take that into account.
