Banana and cheesecake with fresh berries, custard and ice cream is great as a dessert. I serve the delicious cake while it is still quite warm. My son found the recipe on an American food site. We serve it with ice cream, fresh berries and vanilla sauce. It can be frozen.
Banana and cheesecake:
Dough:
2 bananas, peeled
1 large beaten egg
1.2 dl brown sugar
0.6 dl sugar
0.6 dl room temperature butter
1 teaspoon vanilla extract
0.6 dl Greek yogurt
2.4 dl wheat flour
1 pinch of salt
1 teaspoon baking powder
Cream cheese filling:
1 large egg
100 g tempered cream cheese natural
0.6 dl sugar
3 tablespoons wheat flour
Preheat the oven to 180 degrees.
Mix crushed bananas, eggs, brown sugar, sugar, butter, vanilla extract, and yogurt in a bowl. Add flour, salt, and baking powder and mix well.
For the cream cheese filling, mix eggs, cream cheese, sugar and flour in a small bowl.
Pour half of the banana batter into a greased tin. Spread the cream cheese filling over the banana batter and pour the rest of the banana batter on top.
Bake for approx. 50 minutes at 180 degrees. Check with a wooden stick and it's done. Cool on a wire rack for at least 15 minutes.
