Cheese sandwiches with strawberries or toast with strawberries are a wonderful summer lunch. When the first Norwegian strawberries arrive, I always make myself a small cheese sandwich with balsamic vinegar and freshly picked strawberries.
Cut three slices of bread. Spread a thin layer of neutral spread cheese on the two bottom slices. Clean the strawberries and cut them into quarters. Arrange strawberries close together on the bottom slice. add slices of blue cheese. Place the next slice on top and place a few slices of brie on it. Pour on some thick balsamic vinegar and place the last slice of bread. Cheese sandwiches with strawberries are put in the oven at 200 degrees and baked until the bread is golden and the cheese has melted a little. Serve strawberry cheese sandwiches with some extra strawberries and basil on top and enjoy.
