Baileys fudge cake with vanilla ice cream and wild berry coulis

Baileys is an Irish liqueur with flavors of aged Irish whiskey, fresh Irish whipped cream, cocoa beans and vanilla sticks. This gives a lovely taste to the cake, which also goes well with dessert, with a little ice cream.

170 gram smeltet smør

200 gram sukker

1 ts vaniljesukker

3 ss Baileys

2 egg

100 gram hvetemel

40 gram kakao

0.5 teaspoon baking powder

1/4 ts salt

Whisk together butter, sugar and vanilla sugar. Whisk in eggs and Baileys. Stir in flour, cocoa, baking powder and salt. Put the batter in a greased round form, size 24 cm dia. Bake the cake at 170 degrees for approx. 25 min in the middle of the oven. Let the cake cool in the mold.

Baileysfudge:

1,2 dl kondensert søt melk

300 gram grovhakket melkesjokolade

5 ss Baileys

1 ts vaniljesukker

A pinch of salt

Heat the sweet milk on low heat in a saucepan. Add the chocolate, Baileys, vanilla sugar and salt. Stir well. Cool slightly before pouring the fudge over the Brownies cake.

Put the cake in the fridge. Leave it there for a minimum of 2 hours before removing the cake and serving.

Forest berry coulis:

400 g frosne skogsbær

100 g sukker

1/2 dl vann

The juice of 1/2 lime

Bring to the boil and simmer for approx. 5 min. Squeeze the mixture through a sieve and cool.
