Blueberry mohito

Blueberry mohito is a fresh drink, with a taste of blueberries and a variation of the Cuban mohito.

8 blueberries (fresh or frozen and thawed), plus some to serve

2 tablespoons freshly squeezed lime juice

2 teaspoons sugar

8 fresh mint leaves, plus some for serving

6 cl white rum

Mix blueberries, lime juice, sugar and eight mint leaves in a cocktail shaker. Use the end of a wooden spoon or a cocktail dredge to crush the mint into the lime juice and sugar. This releases oils from the mint, breaks with the blueberries and helps the sugar dissolve in the lime juice. Add rum, shake well, and strain the mixture into a glass filled with ice, top up with club soda. Serve blueberry mohito with extra blueberries, mint leaves and a lime slice.
