Potato salad with a Mediterranean taste

Potato salad with a Mediterranean taste tastes good for e.g. barbecue, cured meats and fried meat dishes. Why not try this variety, with a taste of the Mediterranean?

1 kg of potatoes

5 tablespoons finely chopped, sun-dried tomato

1 handful of finely chopped parsley

1 tbsp capers

1/2 finely chopped red onion

1/2 lime, juice

1 teaspoon coarse mustard

1 dl olive oil

Boil potatoes, cool them slightly (until you can hold them), before dividing them into cubes.

Mix sun-dried tomato, parsley, capers, red onion, lime juice, mustard and olive oil. Mix in the potato cubes and serve, while the salad is lukewarm.
