Sauce with lots of tarragon is the perfect accompaniment to both chicken and beef. It's easy and quick to make too.
3 large shallots
1 clove garlic
A little butter for frying
1 tablespoon chicken stock
1/3 ltr cream
1 handful of finely chopped fresh tarragon
Salt and pepper
The onion and garlic are finely chopped and fried golden in butter. Add chicken stock, cream and tarragon. Boil down to a nice sauce consistency. Season with salt and pepper.
