Vanilla cream cheese with roasted almonds and fresh berries is one of my favorite desserts and it goes well with slightly finer occasions. Most can be made the day before, so all that remains is to decorate them, just before serving. The recipe is suitable for 8 people.
2 dl whipped cream
2 dl whole milk
1 vanilla bean of good quality, divided lengthwise
4 egg yolks
1 dl sugar
4 dl lightly whipped cream
200 g roasted almonds
Fresh berries, preferably several kinds, for example blueberries, blackberries and strawberries
Mint leaves for decoration
Put the gelatin plates in cold water for 5 minutes.
Boil milk, cream and vanilla bean. Whisk egg yolks and sugar lightly together. Dilute the warm milk in the egg yolks and heat until it starts to thicken without boiling.
Strain the mixture, stir in the gelatin sheets and cool the cream until slightly lukewarm. Whip the cream lightly, without it becoming completely stiff, and stir it together.
Divide the vanilla cheese mixture into 8 dessert bowls and refrigerate until serving. Serve vanilla cheese with roasted almonds and garnish with fresh berries, mint leaves and perhaps a French macaroon.
