Vanilla ice cream with a hook

A variation of serving croissants is to serve the vanilla ice cream with a sprinkle of homemade croissants. It is not at all difficult to make the croquette yourself and it can be used for much more than ice cream, e.g. other desserts or cakes.

200 g almonds

250 g sugar

1.5 dl water

Place the almonds on a baking tray with baking paper and brown them in the oven at 160 degrees for 15 minutes.

Boil water and sugar, in a frying pan and stir until dissolved. Let it cook at medium temperature until it gets a nice golden brown color. It takes a few minutes. Pour the sugar mixture over the almonds and cool. Break the mixture apart and run it to a boil in a food processor or put it in a bag and beat it with beef banks or a rolling pin, until you are happy with the size of the hook.
