Cheesecake with apple and raisin goes well with dessert. What's extra funny is that the honey comes from a hive that is a five-minute walk from our house and is owned by beekeeper Kristian Eriksen, who is a childhood friend of my eldest son.
Bottom:
100 g oatmeal
50 g almonds
50 g hazelnuts
1 tablespoon honey
1 tablespoon butter
2 tablespoons brown sugar
1 dl apple juice
Process the oatmeal, almonds and hazelnuts in the blender until a uniform mass. Heat honey, butter, brown sugar and apple juice and mix it with the almond mass. Place baking paper in the bottom of a small springform, press out the nut mixture and put it cold.
The apple and raisin layer:
4 peeled diced apples
3 dl water
150 g sugar
2 tablespoons lime juice
2 tablespoons lime zest
1 dl raisins
Cook apple cubes together with water, sugar, lime juice, lime zest and raisins. When the apples are tender, the mixture cools. Pick up apples and raisins and place them upside down. It doesn't matter if any of the sheets are included, but don't include all the sheets.
Ostelaget:
250 g cream cheese natural
100 g sugar
1 teaspoon vanilla sugar
2 egg
1 cup sour cream
Whisk it all together until it becomes like a cream. Place the cheese cream on top of the apple mixture and bake the cake at 150 degrees for 40 minutes. Leave the cake in the pan in the refrigerator until the next day. Garnish with lime and raisins.
