Tapasrestepizza

Tapas leftover pizza is great when you have tapas leftovers. We eat tapas quite often and much of the reason is that it can be varied almost endlessly.

After pre-frying the bottom, I spread on pizza sauce. Mine consists of chopped tomatoes (preferably Mutti), finely chopped onion, garlic, oregano, salt and pepper. Everything is cooked for a long time, until it tastes naturally sweet.

Then I put on the cheese leftovers after the tapas. Here I have used various Spanish cheeses, which are sold in 5-packs, especially intended for tapas. You can of course use the cheeses you want, but I recommend that you use at least one that is well stored and maybe a blue cheese (yes then, it tastes good on pizza, even if you do not like it on the slice of bread).

On top I have put pineapple, sun-dried tomato in strips, small tomatoes divided in two, pickled peppers, red onion in strips and various sausages (both bacon sausages and sausages intended for the grill). It also tastes good with serrano ham on. If you put it on top and fry it, it becomes a bit like bacon. You can also wait to put it on until after frying, it also tastes good.

The pizza is baked further at a high temperature, until it is golden and fine.
