Fried cod with barolo sauce and anna potatoes is my favorite cod dinner. Barolo is a fantastic wine and with a whole bottle of it, it is easy to understand that the sauce will be good.
1 løk, finhakket
6 brune sukkerbiter
1 flaske barolo
2 ss oksefond
1 ss worshestersaus
Salt and pepper
Fry the onion in a little butter, together with 6 brown pieces of sugar. When the mixture has become like syrup, add wine, fondant and Worcestershire sauce. Boil in to 1/3 of the original amount. Season with salt and pepper.
The cod is salted and peppered, before it is placed in a refractory form and placed in the oven at 200 degrees, until it is ready.
Annapoteter:
400 g poteter i tynne skiver
50 g smør, smeltet
1 ts salt
1 ts pepper
Mix everything well so that the potatoes get butter everywhere. Place the potatoes in fireproof portion forms and place them in a water bath in the oven at 180 degrees until the potatoes are tender and deliciously brown. It takes approx. 45 minutes.
Serve fried cod with Barolo sauce, crispy bacon and Anna potatoes with vegetables of your choice.
