Chicken with mango salsa is a delicious dish with the taste of Malaysia and Thailand, most of it can be prepared well before the guests arrive and is easy to serve to many. This recipe is suitable for 4 people.
650 g chicken fillet
Marinade:
4 dl sweet chili dipping sauce
1 finely chopped chili
3 cloves finely chopped garlic
2 cm finely grated ginger
Salt and pepper
Mix all the ingredients for the marinade. Cut the chicken into strips and stir them into the marinade and let it marinate in the fridge for at least two hours, but preferably overnight. The chicken can either be threaded onto barbecue skewers and grilled until cooked through, or placed on a baking tray, drizzled with oil and baked in the oven at 200 degrees until ready.
Limedipp:
The juice of 1 lime
3 dl Turkish or Greek yogurt
2 teaspoons honey
1/2 ts salt
1 teaspoon ground, black pepper
Mix all the ingredients for the lime dip and refrigerate until served.
Mangosalsa:
1 mango in cubes
1 finely shredded spring onion
1/2 red pepper into small cubes
1/2 cucumber into small cubes
The juice of 1 lime
1 handful of finely chopped coriander
1/2 ts salt
1 ts pepper
Everything is mixed and set cold until it is to be served.
For serving:
8 tortilla chips, heated in foil in the oven at 150 degrees for approx. 10 minutes.
1 pot fresh coriander
2 glue in boats
Serve chicken with mango salsa and the rest of the side dishes separately and let guests put together their own variations.
