Baked catfish with duchess potatoes, butter steamed root vegetables and Madeira sauce

This is delicious party food and much can be done almost ready in advance. The recipe is suitable for 4 people.

800 g steinbitfilet

2 pk serrano ham

Pepper

Divide the catfish into pieces of 200 g, sprinkle with pepper and wrap them in serano ham. Put them in a greased, refractory dish and bake them at 200 degrees for approx. 15 min. The time depends on the thickness of the fish.

Sauce:

6 shallots, finely chopped

2 tablespoons butter

1 clove finely chopped garlic

1 bay leaf

3 tablespoons shallot fund (or beef fund)

3 dl sweet madeira

3 dl cream

Fry the shallots in butter. Add garlic, bay leaf, fondue and madeira. Boil in half and add 3 dl cream.
