Cucumber salad tastes great with almost any kind of fish dish. Here is a healthier variety, with stevia instead of sugar. Stevia is an herb that can taste sweet, does not contain calories and does not affect blood sugar. You can buy stevia in health food stores and it tastes just as good as sugar in the cucumber salad (and in many other dishes).
2 dl water
1/2 cup vinegar
1/2 ts stevia
1/2 ts salt
1/2 ts pepper
1 cucumber
Mix water, vinegar, stevia, salt and pepper. Taste if the sheet is good and add if necessary. more spices or stevia. Cut the cucumber into thin slices. I use a cheese grater, which makes it easy and the slices are nice and evenly thick. Put the cucumber in the vinegar mixture and leave it to soak in the fridge for at least 1 hour, preferably overnight.
