This salad is the perfect accompaniment to Filipino dishes.
1/2 mango in cubes
1 pepper in cubes
2 spring onions in strips
1 handful of finely chopped coriander
Dressing:
2 tablespoons good olive oil
2 tbsp lime
2 tbsp soy sauce
1 tablespoon brown sugar ev. honey
Stir the ingredients for the dressing well together, so that the sugar dissolves and pour it over the vegetables.
