Gluten-Free Chocolate Chip Cookies

Chocolate Chip Cookies can be made in many varieties. This edition is with nuts and both dark and white chocolate. You can use what you like best, but it is important that the total amount of nuts and chocolate is more or less the same.

120 g smør

100 g sukker

120 g brunt sukker

1 ts vaniljeekstrakt

2 store eggeplommer

175 g rismel

2 ss maisenna

1 ts bakepulver

3/4 ts havsalt

100 g mørk sjokolade, hakket

100 g lys sjokolade, hakket

50 g nøtter (pekan-, hassel- eller valnøtter), hakket

Whisk butter, sugar and brown sugar white and fluffy (approx. 3 min.). Add vanilla extract and egg yolks and continue to whisk for 2 min. Sift in rice flour, cornstarch, baking powder and salt and mix well. Stir in chocolate and nuts. Using a spoon, place the dough on top of a baking tray lined with parchment paper. Place them at a good distance, because they say out during the roasting.

Bake in the middle of the oven at 180 degrees for approx. 13 minutes.
