Gluten-free fiber bread

100 g walnuts

100 g sunflower seeds

100 g almonds

50 g flaxseed

1, 5 dl gluten-free oatmeal

400 g gluten-free fiber mix or other flour mix

1 pk dry yeast

1 ts salt

5 dl lukewarm water

2 tablespoons fiber husk

Mix together water and fiber husk and let it swell approx. 5 min, so it becomes a sticky mixture. Beat nuts, kernels, seeds and oatmeal to a fine mixture in a blender. Mix everything well together, to a smooth, fine dough. Add ev. more water or flour if the dough is too dry or wet. Leave the dough to rise for 1 hour.

Shape the bread to your own liking and cut a pattern with a sharp knife. Brush with water. Raise for approx. 30 minutes. Bake at 200 degrees for approx. 40 minutes.
