Grilled vegetables are suitable for more than barbecue, they can be used with most meat and fish dishes. We grill all year round, but of course it's nicest in the summer. One of the favorite accessories for grilled food is grilling the vegetables. It is simple, can be varied almost endlessly and tastes very good.
Peel a squash, grate it and chop it into small pieces. Here I have used carrot, purple radish, parsley root and onion. Place the vegetables with a good dab of butter, in a form that can withstand the grill. Season with desired herbs and spices, e.g. rosemary, garlic, salt and pepper.
Put the mold on the grill and stir occasionally. When the vegetables start to look clear, it is wise to take a little taste, to check that they really are. Eat with fish or meat of your choice.
