Boiled salmon with cold cream sauce and cucumber salad is a classic on Norwegian dinner tables. Since both the sauce and the cucumber salad can be made well in advance, this dish is suitable for guests. The recipe is suitable for 4 people.
Sour cream sauce:
3 dl sour cream
3 tablespoons finely chopped chives
2 tablespoons finely chopped dill
2 tablespoons lemon juice
Salt and pepper
Mix everything and season with salt and pepper
Salmon:
2 liters of water
800 g salmon
2 bay leaves
2 slices lemon
6 ss salt
1 tablespoon whole peppercorns
Boil water, bay leaves, lemon slices, salt and pepper. Add the salmon and let it soak for 10 minutes.
Cucumber salad:
2 dl water
1/2 cup vinegar
1 tablespoon sugar
1/2 ts pepper
1 cucumber
Mix together water, vinegar, sugar and pepper. Cut the cucumber into thin slices. I use a cheese grater, which makes it easy and the slices are nice and evenly thick. Place the cucumber in the vinegar mixture and leave it to soak in the fridge for at least 1 hour. If you want a sugar-free alternative, you can make this .
Serving:
Serve cooked salmon with cold cream sauce, together with cucumber salad and optional potatoes, e.g. baked pearl potatoes, for which you can find the recipe HERE .
