Fluffy Thai salad with beef is very popular with us. The mixture of salty, sweet and strong is absolutely amazing. This Thai salad can be made from beef, but can also be made from leftovers from a dinner of e.g. tenderloin or chicken or pork.
Dressing:
1 box of coconut milk
1 tablespoon peanut butter
1/2 glass sataysaus
2 dl sweet chili dipping sauce
1 lime, only the juice
Stir everything well together and leave it cold while you make the salad.
Salads:
1 mango in small cubes
1/2 cucumber into small cubes
1/2 finely chopped red onion
1 finely chopped spring onion
1 finely chopped, red pepper
2 finely chopped chilies
2 limes, only the juice
1 pot finely chopped coriander
Mix the salad in a bowl or on a platter.
Beef:
200 g beef
4 tablespoons neutral oil
1 ss red curry paste
1 ss sweet chili dipping sause
Divide the meat into cubes and fry it quickly in the oil, along with red curry paste and sweet chili dipping sauce.
Mix the meat with the rest of the salad and serve immediately, along with the dressing.
