Potato salad from Mediterranean country

1 kg boiled potatoes divided into suitable mouthfuls

2 tbsp capers

1/2 dl good olive oil

1 good handful of parsley leaves, finely chopped

2 tablespoons tomato and balsamic vinegar

Salt and pepper

Mix well together. Tastes good cold, but best when still warm.
