Pudding in the pan is a nice dish, when you want to use up leftover food. It tends to be served with fried eggs on top. In this variant here I stirred in lightly beaten eggs towards the end. I think it will be at least as good and there will be less dishes. You can make pudding from most things, but here's what I had left over today:

Boiled diced potatoes

Bacon cubes

Onions, finely chopped


Eggs, beaten

Parsley, chopped

Fry the bacon cubes and take them out of the pan. Fry the potatoes and onions in a little butter, so it gets a nice color. Add the bacon and paprika. Add eggs, stir, sprinkle with parsley and serve with good bread and possibly. ketchup, BBQ sauce or any other sauce you fancy.
