Poronkeitto - reindeer soup

Poronkeitto is a tasty, traditional soup, served with slices of meat on top.

1 kg reindeer meat, preferably forequarters

4 l game power, ev. water and wildlife funds

2 onions in coarse pieces

1 teaspoon allspice

4 carrots in 2 cm pieces

1 celery stick in 1 cm pieces

8 boiled potatoes in large cubes

25 g byggryn

1 leek in 2 cm strips

1 tablespoon finely chopped parsley

Salt and pepper

Put the meat in a saucepan and put it in the oven at 200 degrees, so it gets a little browned. It takes 30 min. - 1 hour. Add onion, allspice and power, put the pot on a hot plate and let it boil. Foam ev. of, if needed. Let the meat simmer for min. two hours, check if it is tender and leave it if necessary. cook for another 1-2 hours. Add the carrots, celery stick, potatoes and barley and cook until the potatoes are done. Add leeks and season with salt and pepper. Let it cook for 5 min. and stir in parsley leaves just before serving.

Serve poronkeitto as soup and place slices of the meat on top.
