Potato waffles are easy and filling. Try them for lunch or dinner.
4 dl milk
3 dl wheat flour
1 dl potato flour
1 ts salt
3 tablespoons melted butter
1 ts pepper
1 teaspoon baking powder
5 cracked medium sized potatoes
1 finely shredded spring onion
Stir together eggs, milk, wheat flour, potato flour, salt, pepper, baking powder, butter, potatoes and spring onions. Let it swell for about 1/2 hour before frying them on medium heat in the waffle iron and serving them with the desired accessories.
I have served my potato waffles with salad, finely chopped red onion, corn, sour cream and bacon.
