Västerbotten pie with bacon, leeks and onions is a Swedish classic and can be varied with e.g. salmon instead of bacon. Västerbotten pie with bacon and onions goes well on the cold table or for appetizer, or lunch or as a little evening shoe. Västerbotten cheese is a bit reminiscent of Parmesan in taste, but it is softer and you can buy it on Meny. This recipe is suitable for 4 people as lunch or 8 people as appetizer.
Paibunn:
100 g butter
3 dl wheat flour
2 tablespoons water
1 pinch of salt
Knead together the ingredients for the bottom. Roll it out into a circle that covers a shape approx. 26 cm in diameter and place it on top. Press firmly on the edge. Prick the bottom with a fork. Let the mold cool for at least 30 minutes. Pre-fry the pie crust in the middle of the oven at 200 degrees for approx. 10-15 minutes. Cool.
Paddles:
2 large onions, finely chopped and fried soft in a little butter
1 pk bacon cubes, crispy fried
1/2 leek, finely chopped
4 dl grated västerbottenost
Mix onions, leeks and bacon and spread it over the pie crust. Sprinkle with the cheese.
Eggestand:
3 egg
3 dl cream
Salt and pepper
Whisk together the ingredients for the egg whites and pour the mixture over the pie filling
Bake the pie on a rack, far down in the oven at 225 degrees for 20–25 minutes, until it has set. Let the västerbotten pie stand for a few minutes at room temperature, before splitting and serving.
