My mother makes the world's best stew. The secret is knuckle, and as with many Norwegian traditional dishes, lots of cooking time.
1 salt pork knuckle
1.5 kg of beef
1 leek in rings
1 small celery root in small cubes
4 large sliced carrots
12 large diced potatoes
Put the pork bone in a saucepan of water, boil it for 2 hours and peel it apart. Divide the beef into cubes, brown it in butter in small portions and cook for a minimum of 2 hours in the power from the bone. Add the meat from the knuckle, knuckle, leek, celery root, carrots and potatoes. Boil for another half hour and season with salt and pepper.
The world's best stew is served with flatbread.
