Pad thai with chicken is a quick and easy dish, which is served as fast food in Thailand. I probably use approx. 20 minutes to make it. You can use bean sprouts from a box, but the fresh ones taste much better.
This recipe is suitable for 4 people.
You start with the sauce, which consists of:
4 ss tamarindpaste
12 tablespoons water
8 tbsp fish sauce
8 tablespoons brown sugar
4 tbsp soy sauce
Everything is stirred together and set aside.
The next thing you need to do is boil a pot of water for 1 packet of glass noodles (for 4 pers.). Let them soak in the water for 5 minutes, before rinsing them in cold water and setting them aside.
4 finely shredded chicken fillets
5 tbsp rapeseed oil
4 cloves finely chopped garlic
2 egg
100 g bean sprouts
6 finely shredded spring onions
100 g peanuts or cashews
2 ts chiliflak
Heat the rapeseed oil in a wok over medium heat. Add the chicken fillet and garlic and simmer in the oil until the chicken fillet is almost cooked through, before adding the eggs and stirring until it starts to look like scrambled eggs.
Add bean sprouts, noodles, sauce, spring onion, peanuts / cashews and chili flakes. Let it cook for 5 minutes, stirring constantly.
