Baked salmon with Swedish rum sauce or roe sauce with baked sexy potatoes

Baked salmon with Swedish romsauce or roe sauce with baked sexy potatoes and cucumber salad is an easy dish to serve to many and it tastes very good. Both the sauce and the cucumber salad are made many hours in advance, so you only need to look after the potatoes and salmon. I get bullied a bit in the family, because I call them sexy potatoes, but it's the little red moraine potatoes, which are quick to prepare and look like this:

Potatoes:

200-250 g potatoes per person

Rapeseed oil

Salt

Shake a little oil in the pan and put the potatoes whole. They can be seasoned with what you want from both spices and herbs. Here I have used only salt . Roll the potatoes in the oil, so they are covered whole and fry them at 220 degrees until tender. Check with a pointed knife.

Cucumber salad:

2 dl water

1/2 cup vinegar

1 tablespoon sugar

1/2 ts pepper

1 cucumber

Mix together water, vinegar, sugar and pepper. Cut the cucumber into thin slices. I use a cheese grater, which makes it easy and the slices are nice and evenly thick. Add the cucumber to the vinegar mixture and leave the cucumber salad to soak in the fridge for at least 1 hour.

Cucumber salad

Swedish rum sauce or roe sauce:

400 g creme fraiche

75 g mayonnaise

2 shallots, finely chopped

10 cm leek, finely chopped

75 g red roe, e.g. salmon roe

1 ts salt

1 tsp lemon pepper

Stir everything together and let it sit cold for a couple of hours, before seasoning with salt and possibly more pepper. The roe is very salty, so it's important to take that into account.

Salmon:

200-250 g salmon fillet per person, preferably Salma

Butter

Salt and lemon pepper

Divide the salmon into suitable portion pieces in a baking dish, greased with butter. Season with salt and lemon pepper and put it in the middle of the oven at 200 degrees for 10-20 min, depending on the size. If you use a cooking thermometer, the salmon should be 47 degrees when you remove it.

If you want to take the salmon in sous vide, you can season it and vacuum it with a little butter or oil, before putting it in sous viden at 45 degrees for 25 minutes.
