This sauce is great for both red and white fish. The recipe is suitable for 6 people.
1 onion, finely chopped
1 clove garlic, finely chopped
1/2 fennel, finely chopped
1 tablespoon butter
1 apple, peeled and finely chopped
1/2 dl white wine
1 tablespoon chicken stock
1/2 l cream
Salt and pepper
Glossy onions, garlic and fennel in butter. It should not turn brown. Add the apple, wine and funds and let them boil in until there is almost no liquid left. Add cream and let it boil for a few minutes until it thickens slightly. Run the sauce evenly with a hand blender and season with salt and pepper.
